when I add an event to the calendar I can adjust the Cell background color, but the event itself is being displayed with a "highlight" color.

where can I change the color of the text and or the highlight color for the events?

In the module.css file there is a section for .EventSelectedDay (I think this is the correct style to edit), there is a background color attribute specified there, change that and it should change your highlight color.

instead of modifying module.css override the setting by adding the corrected value to your skin.css or portal.css (reachable from inside site settings).
