After successful installation to a web server, can/should I delete the Install directory in the root folder?

it depends. There are scheduled tasks (that are disabled by default) that scan the install directory to automatically install resources placed there (i.e via ftp or file copy). In addition, the install.aspx page has a number of querystring options to help with installing resources, performing updates etc. Personally I would leave the folder there

I agree with Cathal, the Install directory is something you want to leave in place as you can use it to install modules, skins and other resources as well as it is the page that you utilize to kick off the installation process for upgrades.
