Can I use an MX record instead of a SMTP server name in my DNN host setting?   I tried this but it was not working so I thought maybe I am using an incorrect config.

How would you do that?  Are you talking about just putting the HostName in the server field?  If so, the answer is no.
An MX record is a pointer to the HostName of your mail server for the zone (domain), and is used by other servers to lookup where to send mail to your domain.

Maybe you are trying to get it to use a backup mail server in case the primary is down?  
If so, it would be a nice enhancement to provide an alternate servername for sending.
