I would like to change the information stored about a user.  Remove some fields, add others. 

Please point me in the right direction.

    To add fields you can create another table in the database with column UserId. To get the UserID value use the module UserInfo property.
    As for removing fields... Just modify the registration module (or create your own). That would make some fields in the database unused, but who care about that :)
