I know how to add a new role but how do you set different premissions for that role - such as administration you can add and delete pages?  Is this done through a global site setting, what do i have to do?

there are no global settings for roles currently (except for admiistrators role, that is handled especially).

you can grant view/edit permissions for any page (edit includes permission to create subpages), module or filesystem folder.
