When adding, editing or removing an item in the "store catalog" I systematically get a "critical error" message... timed out connection to the pool? The hoster indicates that this is a flaw in the application and will bring the databse down? Any idea what may be going on? TKS for the help?

Its difficult to say without more info, but a timeout would indicate one of two things.  Either your database connection itself is slow and unreliable or the Store is using all connections available to you in the connection pool without closing them.

It has been reported in other threads that the store does not always close all connections, so this is probably the culprit.  There have been various fixes provided by other members here, just do a quick search to find them.
