I changed the "Edit skin" and the "Edit Container" to another skin and container. I am assuming this is what used to be called admin skin/container in DNN 4.x?

The new skin shows up only when adding a new page or changing the settings of a page. I recall in 4.x the new skin shows up whenever  I am in admin mode anywhere.

Is this how the edit skin should work in DNN 5.0.1?

I've noticed this too.   Its rather annoying as Admin..Tabs page is in one skin but then clicking on the Add New Page link takes you to the other skin!

My guess is that we're doing something wrong but its pretty hard to find info about the changed in DNN 5 from 4.

This is done by design. If its clever I am not sure.

The solution is to use the same skin for both normal and edit. This limit the skinning possibilities but obviously this have not been a design goal in the design of Rel 5.

5.0 does indeed work differently than older versions. It may take a moment to get used to it, but it actually offers more flexibility.

First, your Edit Skin is the skin used when changing Page Settings (automatically invoked as you add a page). The fact that these skins are defined in the location where the Admin Skin used to be in older versions, may lead you to believe they are the same. They are not (that's why it has a new name). In 5.0, all your "admin" and "host" tabs are now just regular pages. For example, if you don't like the skin used for the Admin,Pages tab, you can change it (click on Settings in Control Panel). Of course, because of this change, each Admin or Host page can have its own skin (talk about flexibility!)

The only thing I don't like about this is, now I have to go into each admin page and change them all to point to my admin skin which only has one column.

Origianally I thought I could use the visible="false" attribute, but I don't think that will work for me.  I have two divs floated left and right for content.

I think the only way to get that to work is to use tables in my design and I don't want to.

It would be nice to have a one click or one place to set the admin pages to use a single skin, and then give the user the ability to override that on specific admin pages they want to.
