Go to:  ADMIN -> USER ACCOUNTS -> MANAGE PROFILE PROPERTIES

Uncheck "Visible" for any profile fields you do not want your visitor to see.  These are PROFILE fields.  There are also CREDENTIAL fields that you cannot make "invisible" as the CREDENTIAL fields are always required.  If you need to customize beyond the deault DNN settings then I suggest you look into the Dynamic Registration module from Data Springs.

If you decide to make any PROFILE fields "required" then you'll probably also want to enable the options "Require a valid Profile for Registration" and "Require a valid Profile for Login"  under ADMIN -> USER ACCOUNTS -> USER SETTINGS
