It could be a problem with caching.  Try clearing the cache on Host->Host Settings->Performance Settings and click the "clear cache" link.  You may also need to clear your temporary internet files as images are often cached there.  There have been times that I've had to manually go to the "cache" folder in the portal directories and manually delete the files in the "cache" folder to get rid of persistent code after changes to the skin.

Also, most skins will have a custom search image, so you may need to check your skin files to see if they are applying a custom image.  It may also work better if you actually modify the skin files to apply the image or text that you do want.  I use the following code for the search in the html skin file in DNN5:

The last param with name "Submit" is where you can customize the search button to be either an image as I have above or you could simply insert the text "Search" in the value for a text link.  You might find the default dnn skins helpful in finding the code that controls all the various functions like search, login, breadcrumbs, etc.
