Is there a feature in DNN 5 where if 2 people were working on the same page that it would prvent them from overwriting their own information?

If not is there a way i can play around with the roles and users to prevent from to people from overwriting the content that they are putting up on a page?

due to the stateless character of HTTP protocol, it is very difficult to lock content as long as one user is working on it. The only chance is placing a flag and emitting a warning, if a different user tries to edit the same, and again, when saving content, comparing, if it has been changed internediately omit a warning or refuse to save. AFAIK none of the modules I know implement this behavious (last save wins).
