Is it possible to dynamically add email address to the "To" field based on a selection in a UDT field? Any pointers will be appreciated.

yes, but the type of that  column must be a valid email source.

Now add [SendTo] to the "to" field.

I have one more question.  I need to be able to capture the name part from the name|value pair in the list of values.  I tried using a Calculated column but it shows only the value part of it (for eg xyz.com from the above screen shot).  Is there a field/token that I can use to capture name part?

No, currently not. If you really need such a feature, you need to write it with nested IIFs, e.g.

IIF(col="val1","name1",IIF(col="val2","name2",...))
