I am sure that I have just missed the options but is there a way to hide the Importance option for events?

If you mean in the edit view, the answer is currently no - apart from by edit EditEvents.ascx and setting the appropriates items visibility to hidden. If you mean in the detail view, then edit the detail view template via the template settings options in the module settings. Cheers Roger
