The store module works quite well but for a new build would it be possible to add a sizing option to products?
Lets say the store is meant for clothing. Under the current configuration you would have to have separate listings for each size instead of just choosing "M-L-XL".

Second:
On the "more info" page for the item would it be possible to add the ability to insert additional images for the detail?

The variant product feature is on my looonnnngggg to do list! ;-)
You can insert images in the product description or even a video if you want!

I see where I can add a single image, and of course I could add images in the Html description but I was more talking about adding the ability in the admin side of the product to add more than a single image as the Html images would be static.

Something like multiple images being upload and associated with the product with one of them having a tag for being the thumbnail in the category view.
When the image is clicked to go to the detail view the original thumbnail is shown fullsize (the behaviour that happens now) and on the bottom have two are three additional thumbnails that when selected replace the large image with a large version of their own.

Sorry, I did not understand your request! :-( Currently, the version 02.01.36 of the Store module is in the release tracker. When the current version will be "officialy" released by the Core Team, I will start to rewrite completly the Store module. I have a very long to do list! I will add this kind of features using some JQuery scripts to enlarge images.
