Hello,

is there any modules that handles any site activity and save them on log files ?
such as if you're editing some HTML modules, you will got the log of files on who changes it, when does it changed, and the log file is kept around 30 days.

is there any ?

HTML module changes are saved inside the module (see versions) and last change of module settings as well as page settings is logged in the database and can be logged in the event log as well, but besides you need to look for modules providing auditing inside.
