I have noticed someone was added as an "unauthorized user" that I did not add.  What is an unauthorized user able to do (if anything)?  And how does someone sign themselves up as one? Thanks!

That depends on what ROLES they are in. Do you have registration turned on on your site? Do they have any ROLES assigned to them? What version of DNN are you on?

They are subscribers but I don't know how they could have subscribed.. and what that even means... what did they subscribe to???  I have DNN 4.8.3 and just recently took over the website.  Also new to DNN (can you tell? haha)  I just want to design my little site and keep these "subscribers" out... but first I need to figure out what that even means.  Thanks!!!

Subscribers is an automatic role, anyone who creates or has an account created, will be put into the Registered Users role and Subscribers role. They likely don't have any special access. Go to the Admin/Site Settings page and see if you can see the Registration settings, see if it is set to None, Private, Public or Verified.
