I was wondering if there was any information about what is the recommended server requirements from basic install to large orginizations.

For example, this would be for a large company.

Multi core/Multi CPU x64 with 2 GHz
4 GB RAM
OS part 100Gb + Data part 100Gb
Bootable DVD ROM
1 NIC

I've run DNN on a variety of hardware configurations, it really comes down to what the site will be doing, how many pages (Tabs), how many users, how many hits per hour, etc. This site: http://www.dotnetnukes.com/Help/Requi... makes some good recommendations. Let me know if you have any other questions.

The minimum VM I've seen DNN run on (and I mean run, not necessarily perform well) was 512mb.  This includes Sql Express.

Memory is more of a limiting factor than anything else.  Of course you'll need a decent processor but memory is most likely to be the bottleneck.

For small production sites I think about 700 mb memory is the step off point.  The more you add the better your site will be.
