I've been working on a site previously created and maintained by a guy who (unfortunately) passed away so I have nobody to reference back to to find out what goes where and what does what, etc.

I'm trying to add a field to the checkout page (the one where customers enter their coupon codes and/or additional information). We want to add a field where they can enter a UPS account number. I managed to get this form field to show up on the page (although it's been taken down since it didn't work) but the information was not being transported to our payment gateway. I probably did it in one file and not another one that was linked to it. I'm very new to DNN and Catalook and I'm finding them both very difficult to get used to. Any help would be much appreciated. Thanks!

You should look for answers at Catalook's support, since it is not a DNN core module.
