I have successfully setup the AD provider on WIndows Server/IIS7 with DNN 5.6.1, but I have noticed that the email address for each user continue to get overwritten by the wrong address.  For example, each persons username is FirstLast but their email is FLast@domain.com... something in the provider seems to be changing the emails after I update them back to FirstLast@domain.com which is wrong.

Bill, I'll have to double check the code but I know it does create a dummy email based on their username and the domain email if it can't pull an email address from the Active Directory. It is possible that it's constantly updating the field on every login. Please post this in Codeplex (http://dnnauthad.codeplex.com) with as much detail as you can on recreating the issue.
