Some of the pages on one of the websites I support says "Updated by system...." What does this mean? Some users(web visitors) have come back to us saying they could edit the page. While I believe that this might have happened due to the permissions on tha page is there any way to track down how this may have happened? like audit on the page??

 Any help would be hugely appreciated.

DotNetNuke tables often have 4 audit columns to record who created and updated a record and what date it was created and updated on. In some cases such as page settings and module setttings this information is shown (via the moduleaudit control) - typically it gives the user who made the update. However during installation there is no user, so we record this as "system" -this is what you're seeing i.e. pages created during installation.

Thank you for that Cathal. But my question is with regards to a site that has been up and running for about 2 months now and some site visitors were able to edit/update them. I know this is to do with permissions on the page, Is there any way to figure out what permissions were set at the time of page creation and know whether they were changed at any point of the time?

you can check the admin->event viewer for updates but there isnt any easy way to determine what/when changes to a particular page were made.
