When you scroll through my menu items, the width of the column changes when it gets to the widest item. Basically, the width of the column hugs the widest entry and then expands on rollover. Check it out on our site. When you go over about us and the dropdown pops out, notice how it gets wider on our vision and purpose. How can I make it a standard width where I have a little padding on the side of the widest element?

This is one of the things that took me a long time to figure out how that works but it comes down to adjusting the MainMenu items in your skin.css. You really need to look at .MainMenu_MenuItem and .MainMenu_MenuItemSel. In the last you define margins causing the menu to jump up and down. This is really something you should by trial and error which makes you understand what each class does. A good start is to look at the default skins in Dotnetnuke.
