If the category "list" view is not selected in the preferences then I can enter a category.
If the list view is selected in preferences how do I edit the list of categories, because nothing shows in the list currently?

Use the host->Lists page to create a list called "Document Categories" and add items in there...

where is the Host>list page? on the server meaning I'd have to edit a file, or is it within the content of the site?

1) Login as host
2) Highlight the host menu
3) Click on the "lists" sub-menu

ok, ummm all I have for login is admin. or thats all my web host provider gave me
