Hi Stuart,
Generally there are two ways to create package of a module.
1. After adding a module to your dev DNN site, you can go to Host-> Extentions -> Then edit your module, then in popup at the bottom you will find 'Create Package' Button.
2. Using build script: Change your project mode from debug to Release and then build, it will create inside install folder of your module folder. 
If you are not able to get  this done, then I will suggest for DNN 7 development use Visual Studio 2012/ Express edition and Christoc DNN module development template(http://christoctemplate.codeplex.com/).
