I've tried several times to upgrade a DNN site from 07.01.00 to 07.01.01 and 07.01.02 several times but I can't get past the screen that requires host credentials. I'm certain it's correct, because I'm able to log into the site with the same credentials.

Can anyone explain why this would be happening and how to correct it? Or an alternative method to upgrading a site.

can you please check with a httpproxy such as fiddler to see what is happening i.e. is a request occurring but not finishing. It's also an idea to check with the console mode of the browser (in most cases press F12) to see if some unexpected script is causing the issue. We have had a few other reports of the same thing but no one has been able to provide a reason why it is occurring yet, so it would be helpful to check. Also, please check if you are using iFinity.FriendlyUrlProvider.dll already, it is known to cause issues (see problem 2 in http://www.chrishammond.com/blog/itemid/2636/after-upgrading-to-dnn-712-site-settings-doesnt.aspx )
