I can't remove or edit the bit at the top of a new page that says TEXT/HTML. Can anyone help please?

Kay,

do you mean the page or a module title (I think so, because Text/HTML sounds more like a module title than a page title)? Depending on that you can edit this title either in the page settings or in the module settings. Make sure you are in edit mode.

As Michael said, that's the module title of an HTML module. You can edit it in the Module Settings. If you just want it to go away, you can specifify a container for the module that does not display the module title.
