Can the User Defined Table be used to develop User Customization. I am trying to set it up to where each user has a profile page. Is there a way that the table can be set up to where it only returns the current logged in users row of information. There is option to allow users to edit only their own row so I figure there should be a way to only display the users own row.

No, this is not the purpose of this option. You should use the new user profile editor instead, where you can declare your own properties.

Unfortunately there is currently no user list module. you might query database directly to construct a link to the profile, but I have not tried this yet.
