Is there an easy way to add birthday as a profile property? There is no 'date' datatype, so I was curious if the only way is to either create a regular expression validation or create lists?

Have you found a way yet?  I'd be curious.  I would need a field like that too.

I have the same requirement and tried what I thought would be the right regular expression for validation, but it did not seem to work...  Here is what I tried...

^[0-9][0-9][0-9][0-9]/[0-9][0-9]/[0-9][0-9]$

But it did not seem to have any affect.

I realized why this did not seem to work...  I was always logged in as SuperUser and so the validation is bypassed.  When I logged in as a normal user, this RE did work.  Unfortnately it does not give any hint as to why the date is invalid, just that it is invalid.  Ideal would be to have a message on the screen with the format like: yyyy/mm/dd to the right of the property or a custom msg that is displayed in addition to the error msg indicating the field is invalid.  I guess you might be able to make the name like: BirthdayYYYY/MM/DD, but not sure about the slashes and that really looks bad.  To help the users, I put the default value as YYYY/MM/DD.
