What are the implications of running a full-trust environment?  Does that mean we are more open to attack?  I am not certain I understand what it would mean for us to migrate the site to a full-trust environment.

I hope that you are getting somewhere with your problem (I know the feeling), if not I have a couple of suggestions for you to consider: 

If you require full DNN integration try AspDotNetStoreFront, I realise this is an expensive option, but suggest that this may be the only reliable DNN e-commerce engine. Others as you pointed out are limited and the ones that I have tried seem to be half developed and poorly documented. Debugging poorly documented half finished developers modules with a deadline approaching is not a lot of fun I can tell you.

If you don't require full DNN integration then consider something like ClickCartPro. A well developed PHP shopping cart that will run happily on a windows server, alongside DNN (with some PHP extensions), it runs off the same SQL database. There are many others out there in the marketplace if you search for them.

It really means more latitude for you and your apps.  There is no less security for your site, and nothing special for you to do, it's really the hosting company's responsibility and choice.  Full trust might allow another site on the system to cause your site problems, but not if the host has their servers configured well and pays attention.

Asp store is out of the question, we don't sell $1K worht of regalia in a year!  That is way more than we can spend as a small car club.  It is hard enough to justify spending $100 here and $80 there to get this site up and running.  I put in a ticket to get the site ported over to a full trust server, and I will try again with SDN, even though Luca was not exactly prompt nor accurate in responding (though this may not be a fault on his part).  I think a lot of issues turn up due to the globalization of commerce, and the poor language translations available.  Tis a shame there will never be a common language.

There is a new release of SDN store 02.02.42, and Luca is looking into getting it installed on my site.  Don't know how long this will take, but anxious to get something running!  Have not had any luck with the Kodehedz module either, have not heard back from RotalStore, AliCommerce is almost there, but the 2.0 release is still not out, ASPstore is EXPENSIVE, and Catalook is complicated.  I wish the core store would add a few features.  That would be the best.  Will post if Luca can get the SDN 02.02.42 running on my site.
