Although I don't usually recommend making changes to core modules, this is a very benign one:

In DesktopModules/Documents, edit the file Document.ascx as follows (addition is in red) to hide the owner bound column:

<asp:boundcolumn headertext="Owner" datafield="CreatedByUser" itemstyle-cssclass="Normal" headerstyle-cssclass="NormalBold" Visible="false" />

Resave the file after making the change, upload it to your server (replacing the existing file) and you'll see that the owner column is gone.

Do NOT simply delete the owner bound column server control as it is referenced by positional index in the ItemCreated event handler in Document.ascx.vb

If at all possible, upgrade to the new Document module as it gives you much more flexibility as to its visual layout, etc.

Normally, I would not consider changing the core but sometimes the "customer" can be difficult....
