I suggest switching to 4.0 integrated mode, which is more performant and might use less memory (unless you are using modules, which require classic mode)

I use DNN 6.2 in Shared Hosting (3essentials) with 100 mb pool and i see rarerly a restart (once in 2-3 days maybe).

I have also followed this link and made the changes which seems to have improved the performance by a lot but the issue with app pool is still reappearing and we will be testing out in the next few days:

This is not good news. As i said in an other post of mine, DNN 6.2 is moving away from Shared Hosting. That is from a lot of user base.

Also, by removing unsed extensions: Should we for example Remove "Professional preview " and "Solutions" extensions ? Will that help ? What could we remove exactly ?

Good news: DNN 6.2.1 is going to get improved performance, but I haven't heared about memory footprint yet. You may easily remove Professional Preview, Solutions, Marketplace, any authentication or menu provider not in use. Be aware that each entity (website, user, page, module) requires a bit of memory, but a install site with many sites should still be more efficient, due to using same code for all sites.
