that's very odd, both Date and Datetime are available in all my instances. Can you please open the database (or go to host->sql) and run the following query
SELECT *  FROM Lists  where listname='DataType'

There should be entries for both similar to this (note: ensure portalid is set to -1 and systemlist is set to 1 for both if they're there)

Great, I added those rows to the Lists table and it seems to work fine now. 
Also, when I save that custom property, where is it stored in the database? The Profile table? I couldn't see where my date value was stored.

nevermind. Looks like I can get those values from the UserProfile table.
