The Gemini Change Log contains the most complete list of bug fixes and enhancements for each 5.x version:

I had started working on a Wiki entry that would provide a shortened list of major enhancements/changes in behavior by version but found that I was having a hard time deciding what was "major" and should be included in the short list. Also, some of the newer features such as content localization gradually evolved over several releases.
