I'm new to DNN and I have a few questions that I hope someone can help with:

My hosting provider has version 4.3.5 installed. Is there a way that I can confirm which version of each moduel has been installed? I was reading the "User Defined Table" features on this site (dotnetnuke.com) and it seems that I don't have the same features available with the version installed by my provider. A follow-up question is - can I download the most recent version and install it myself?

Login as your dnn host account, go to Host | Module Definitions.  Module versions are shown to the right.  You can add new modules from here if you have the PA (click on down arrow, Install New Module).
