Is it at all possible to change the wording of the link 'Add New Row' at the botom of the UDT to something else?

Yes, but not on module level.

All strings are editable inside the localization editor, you are looking for "desktopmodules/userdefinedtable/userdefinedtable.ascx, the requested key is AddContent.Action

We already changed that string to a new default within the unreleased udt 3.4.0 to Add New Record

Just to add: in an multi-portal installation, the language editor in admin menu allows you, to specify any language key per portal, overriding language pack or host modifications.
