Is their a simple way to setup an email list that people could subscribe and unsubscribe too with DNN?

I guess it kind of depends on what you mean by "email list."  If you just want to send an email at any given time to every member of a User Role, you can just use the Admin-->Newsletters.  If you want an actual list of emails, one thing I have done in the past is write a SQL query to pull all of them from the database, limited by User Role, and then exported the results as a CSV file.

the built in solution is using the public role "subscribers", where users can subscribe/ansubscribe using "manage services" in their user profile.

If you are looking for a mail list with double check-in/check-out, you need 3rd party modules, have a look at www.snowcovered.com.
