When my wife and I first set our first DNN 4.4.1 site upon our laptop we had no idea what we were doing
and managed to eventually get the site running locally with db_owner as the Owner of the database.

Now we wish to transfer the site to a provider to host, I am wondering what I need to do and how to do it,
to setup the ownership correctly. In the web.config connection string, I assume I'll need to create a UID
and PWD for example, before uploading the site?

it depends, how SQL server is installed on hosting machine. You either get a database installed by your hoster or on lager hosted servers you can install SQL express.

In first case, database owner might be other than dbo, but you should keep dbo as databaseOwner in web.config, otherwise your database will not run.

For a provided database, you will be given login credentials for the sql server, on your own server you need to create login accounts for yourself, either using SQL authentication or integrated (Windows) authentication. You need to adopt both connection strings in web.config accordingly.
