can i insert a token into the HTML/Text editor that will display the portal name?

i am not aware of such functionality. Look around for 3rd party tools, though.

There is DNN token for portal name, but I'm not sure if works within HTML editor. This is [Portal:PortalName]

I did not find list of tokens anywhere so I pulled token names from running DNN application. Full list of DNN tokens is available on the end of (my module) user guide - see appendix A on the end of pdf document. You can download userGuid here.

There is also another module does something similar but its main purchase is along the line of sharing content between portals.  The list of supported tokens is quite extensive which you can see here  http://cs.longnhi.com/LiveDemo/TextHTML/ContentSharingWithDynamicToken/tabid/564/Default.aspx
