How can I tell how many people have subscribed to my announcements?

Use a service like FeedBurner. You will need to disable the built-in module syndication after grabbing the feed URL from the module and add the RSS icon/URL for the FeedBurner feed above or below the module using a Text/HTML module with no container and no title.

Hi Nik, thanks for that pointer. Had a look and Feedburner is very sophisticated. Unfortunately it is way more than I was looking at. Just a simple idea of how many people have subscribed is all I'm after.
