Steve, with moderation turned on, it means that I have to approve the item before it is published.
Then, I just discovered (with this post), that my use can edit their own items, after I have approved them.
What happen if a user edit the item ??? Do I have to approve it again, or is it just modified and publish ???? In such case, a user can do whatever he like, is there a way to avoid this ??? Excepted trusting the user...

With moderation turned on, yes you have to re-approve any edits.

There are 'Upload' roles and 'Moderator' roles. They are not the same.

If a user is ONLY a member of a role checked for 'Upload', then the user can upload files ( they will need to be moderated ). but the user will only be able to edit their own items.

If a user is a member of a role checked for 'Moderator', then the user can upload files ( their uploads will not need to be moderated ) and the user will be able to edit all items even those not uploaded by themselves.

There is no way to allow a user to upload files without requiring moderation and restrict them to only be able to edit their own items. The only way to allow a user to upload a file unmoderated is to make them a Moderator or Adminstrator and both of those roles allow you to edit ANY repository item.

Same here

What (if any) configuration do we need to make to allow uploads without moderation without forcing the user into a moderation role.
