Can someone please tell me how I can modify the way any of the date tokens [PUBLISHEDATE] can be formatted? It's default is long version which is no good for me.

in the currently published version that is not possible i fear.

The new version supports more templating functionality, included full support for core tokenreplace, which includes date time formatting. The new version is in the tracker right now, and should be released fairly soon. Mind you: the new version needs dnn 4.6.0 or newer

I'm currently using version 4.7. Do you know when this might be released?

version 4.0.0 passed the testing stages in the release tracker. I hope it can be included in dnn 4.8.0, and be released around the same time... no promisses though, as resources are spread thin and it is the holiday season, so things might take longer than anticipated....

In good DNN tradition: i don't know when it will be released, and no promises about the release date....
