 We are releasing one skin pack next week currently we have done one for our own site iphone.salaro.com - IMHO it is too much to deliver one for both platforms using a single site. We have tried all the third party solutions and had very little help from the developers so the only viable solutions is to 

1- create a child portal or number of hidden pages on your site with a dedicated skin for iphone and mirror some of the content for that platform. I feel the mobile user is unlikely to want to read everything one has to offer on the main site. After all they are mobile and if they really need to then they can always go to the main site to do the necessary.

2- do a very efficient optimized for iphone screen site that can also look ok on regular browsers. you need to use a fluid skin with no banner etc...
