Is there an attribute that allows me to change the left and right separator in a solpartmenu when the mouse is hovering over a menu item? Is there an alternative menu style that allows me to do this?

 

Any help would be greatly appreciated

I haven't worked with solpartmenu in a while, but you might consider dnnMENU instead.

Does the dnn menu have attribute for the left and right separator when the mouse is hovering over them? If so, what is the name of the attribute?

No not in solparts or dnnnav. I recommend an image instead.
