Is there any information or documentation available on these skin objects?  Where?

currently in Source code only. Shaun blogged about [Text], when listing skinning enhancements in DNN5, a few months back. I know, that Timo started to update the skinning guide and is going to include documentation of all current SKOs.

You can always look in the catalog admin -- Skins there are all standard skinobjects. The xml file (Text.xml Styles.xml) shows the parameters you can use.
