We use the months as categories like "January" , "February" etc. 
This makes it possible to filter all events e.g. in "December". The default order of categories is alphabetically, how can I change it manually?

The sorting is always alphabetical on the category name. Trick: add a character (A, B, C) or a number at the start, e.g.:
"01: January"
"02: February"
"03: March"

etc.

Will this (change order of categories manually) be possible in  4.1.0?

No change on this point defined. If you want any changes, create an issue for the Events module. See my signature..
