I have Users who would appreciate NOT getting an email for every single post, but they do want to be kept 'in the loop'. Is there a way to allow Users to select a 'daily digest' where they get one email per day with everything that has been posted in the last 24 hours, rather than getting them an email every single time someone posts?

This is not a feature of the Forum module yet.  You can request it to the GEMINI as a new feature on http://support.dotnetnuke.com.

I use the DotNetNuke Toolbar to stay connected - shows all blog RSS's and forum feeds...
