To add a page to the Wiki you need to edit an existing page and put a page name in side of [[]]. So to create a page titled "Wiki Page" you would include the text "This is my new [[wiki page]]". Once you save the current Wiki page you can click on the link that is created to view/edit the new Wiki page. There are further instructions at the bottom of the Wiki Page Editor.

Cool!  That is the part I was missing, I had figured the rest out, but for the life of me I could see how to add another page!  I checked it out, and it works great! 

After looking around a bit more I definitely would suggest making that part clearer in the menus though.  I'm gonna be opening this up to K-12 Faculty, and they're not exactly the quickest learners.  *grin*
