Myself and a couple friends are, as part of school, doing a project for a real-world client. 

One of the things our client requested (accessability is very important)  is more clear icons for things like the Print and the RSS feed. It would also be especially super-great if we could add an icon for .pdf's that will be uploaded as part of the news portion of the site, but unless its any more difficult than "find an icon" and "link it to the file", we can handle it.

However, we're having trouble locating what I mentioned before - being able to center align the pictures, and add some text to them, would be extraordinarily helpful. Do you have any idea where I can find that information, or does anyone here know if/how such a thing can be done?

DNN uses icons from a main folder, you can change the graphic there to change the image.  As for your text and pictures, add a Text/HTML module.  Edit the content and if you can't get it in the WYSIWYG display then swicth to the HTML view and edit it directly.
