This might be a silly question but here it goes...

I use sql server 2005 on my local machine. My site host doesn't support SQLExpress 2005 but does host SQL 2000.......can one roll back an already installed DNN database back to a SQL server 2000 mdf and log file?

no, you can't 'roll it back', but you can use DTS/SSIS to export or import (depending on direction) the objects and their data, or else use one of the commonly available utilities to generate the schema and a series of "insert" statements to transfer the data.
