Which version?
In every case you can edit stored procedure Store_Products_GetProducts to sort data by CreatedDate.
Or you can modify code responsible for data sorting. Implemented sorting possibilities are: Manufacturer, Model Number, Model Name and Unit Price (all Ascending or Descending).

Version 2.1.0 is the last official release. I don’t remember if this version has the futures mentioned above because I am using modified RC for a looong time :)
The Catalog module is able to show added products in "New products" section. I hope you know this future, otherwise you should read at least the pinned post in this forum.
If you need to sort by date in the “Products in category” section, some code changes are necessary. The easiest way to achieve this behavior is the modification of stored procedure Store_Products_GetProducts – search in your database.
