I'm confused at the use of the version numbers.  What is the (build) of latest release 5.6.0 and maintenance release 5.6.1?  When was 5.06.00 (459) released?

I would not worry about the (459) stuff and just now that the larger the number the newer and in most cases more stable and feature rich it is.  As a rule of thumb I avoid installing X.X.0 version into produciton and instead wait for at least one service release (the save features but with issues that were found fixed).  The first number (before the first ".") is the major/primary version you normally think of when you think of the product (i.e. DNN 5...), the second number is the Feature Set number (e.i. DNN 5.0 has XYZ features and DNN 5.1 has XYZ new features that enhance it but is not enough of a change to make it a full new version), and last is the Service Release number which is All About Fixes not features though one or two minor enhancements may be added, the service release is primarily to provide fixes and stability to the product.  I hope this helps...

I'll also add that 5.06.00 == 5.6.0 with the latter being just a shortcut way of writing the major and build portions of the version.

As far as what enhancements and fixes are included in each version, you should check out both the Change Log (which includes released versions 05.00.00 and later) and the Road Map which shows what enhancements and fixes are scheduled for the next and perhaps the following versions. As work is checked in and issues are marked as completed, the Road Map for the next version will grow in length. Reported issues and their current status, the Change Log and the Road Map are all found at http://support.dotnetnuke.com.

Note also that is you are wondering if you should upgrade to the just released 5.06.01 at this time, it is highly recommended that you do so as it includes several critical fixes for security concerns.
