I want to implement a registration process that requires the user to confirm / verify, but that doesn't use of a verification code in the way that the DNN process does.

Can anyone tell me if it is possible to customise the DNN registration process to work like this, or if there are any third party products that support it?

You might want to look into Dynamic Login or Dynamic Registration. I think they will build a "link" for verification.

Active Social can do this also using their progressive registration and community roles. In their case it still uses the verification code but automate much of it for the user during the verification process.
